Fat Burning Soup
Ingredients
o 1 yellow onion, chopped
o 2 celery stalks, diced
o 3 carrots, thinly sliced
o 1 garlic clove, minced
o 1 tsp paprika
o 1/8 tsp turmeric
o ½ tsp pepper
o 1 tsp salt or to taste
o 1 can petite diced tomatoes or 2 chopped fresh tomatoes
o 4 cups vegetable broth
o 2 cans white, kidney, black, garbanzo beans or other beans, drained and rinsed
o ½ cup quinoa or diced sweet potatoes (optional)
o 2-4 cups kale, spinach, collard or other greens
DIRECTIONS
1. Saute’ first 4 ingredients in 1 tablespoon olive or coconut oil
2. Add spices, vegetable broth, tomatoes, 1 can beans and quinoa and simmer for 20-30 minutes or until veggies/quinoa are tender
3. Blend 1 can beans in blender or food processor and add to soup for a thicker consistency
4. Five minutes before serving, add greens
5. You can add more broth and/or water for desired consistency/taste
